If you could set up the wiki for us just to the basic extent that it we operable, that would help us out a great bit. We can get someone else to fill in any blanks. Would you be willing to do it for us in whatever way you see fit?

Sure, I've set up several.

You can play with live installations of some common php based wiki software
here:

Although it's popular, I do not recommend mediawiki, the software used by
wikipedia.   It's really not intended for smaller projects and can be very
resource intensive.

My favorites on that page are Dokuwiki and WikkaWiki.

Depending on the hosting setup you have arranged, the python based MoinMoin
might also be an option.

I'm not much of a web designer.  I can get it up and running but if you want
it to look really slick you might need to get someone else to do that part.

If you've arranged for some kind of dedicated server or VPS to host ProjectPM
it opens more doors than shared web hosting which usually just offers php.
