Merry belated Christmas. I'm about to head back to NYC after a week in Texas and have to turn in my book by January 2nd, after which time I'll immediately get to re-doing the proposal in order to allow for the wider audience you're now going for and then look around for some back-up literary agents who specialize in this sort of book. Have you had a go at the sample chapter yet? I expect to have the proposal refurbished and the additional agent contact info obtained by the 4th or so. Let me know if there's anything else we need to go over before I do that.
